Sunday Suppers


Caitlin is the cookie guru at our house.   The girl is a natural with a cookie!  Today's recipe is one that she discovered about a year ago and it's now a family favorite.  We think it is by far the BEST snickerdoodle cookie you will ever want to eat.  These are light and fluffy with that characteristic cinnamon sugar coating, they just melt in your mouth.  Take my advice and double the recipe, you won't regret it.  Sorry no step by step pictures this time, it's been a crazy week as you may have noticed from the post below.  

Super Duper Snickerdoodles

1/2 C (1 stick) butter at room temp
3/4 C granulated sugar plus 2 T for rolling
1 egg
1 T milk
1/2 tsp vanilla extract
1 1/2 C all purpose flour
1/2 tsp cream of tartar
1/4 tsp baking soda
1/4 tsp salt
1 T cinnamon

*** In a mixing bowl cream butter and 3/4 C sugar together.  Add egg, milk and vanilla and blend well.  In a separate bowl mix flour, cream of tartar, baking soda and salt.  Add to the butter mixture.  Cover bowl with plastic wrap and let dough set in fridge for at least an hour or until dough is easy to handle without getting sticky.
Heat oven to 375
In a small bowl or plate mix your leftover sugar and cinnamon.  Scoop and roll dough into 2 inch balls then roll them in the cinnamon sugar mix.  Arrange balls on a cookie sheet but not too close together because they will spread while baking.
Bake for about 12 minutes, don't over bake.  Let cookies cool on a rack and then enjoy.
